For my birthday I engaged an ELVIS Tribute Artist. He was absolutely fabulous. He sang himself, no lip syncing, he danced and had all the moves down pat, He was funny and an all around great guy. KATHY'S PARTY RECIPES



Kathy's Tomato Basil Soup

Ingredients
2 cans Campbells Tomato soup
2 cans Half and Half or Heavy Cream
1 small jar diced Sundried tomatoes
2 cans diced tomatoes
1 onion diced
5-6 clove garlic diced
2 bunches basil stemmed and leaves chopped


For a pot that serves 4-6 people use regular size soup cans, to serve 20 people use family size cans.

Fill the soup can with milk, half and half or heavy cream whatever you have. I whisk the milk and tomato soup til its blended

Drain your sundried tomatoes and reserve the oil for other recipes. Dice the tomatoes and add to pot

add 2 cans diced tomatoes with juice

Saute Onion and Garlic together and add to pot.

Basil, stem the basil, only use the leaves and slice them finely

I throw everything into a crock pot on low, when its hot its done.


Kathy's Peach Bellini Punch

1 container of Peach Sherbet
1 cool whip
1 lg can peaches in syrup
1 bottle Peach Champagne
1/2 bottle peach schnapps
2 cans peach nectar
1 bottle sprite

add in punch bowl stir til sherbet begins melting and its ready

MY BIRTHDAY GIFTS FROM MOM- CAST IRON CURING

I am absolutely thrilled with the cast iron pans my Mama got me. I have been apprehensive about using cast iron I have to season myself, because of all the horror stories about stuff sticking to the surface if it isn't seasoned or used correctly.

My other cast iron pots are all enamel coated so I never had to worry about it.


To season pans I followed the directions on the box. Coat lightly with oil,(I used Crisco shortening) bake in oven preheated to 400 degrees for 45 mins. It put off fumes in the air that made my eyes burn the rest of the night. When the time was up I turned off oven and let them cool in there.


When I took them out the next morning, not all the oil absorbed into the pans, some had congealed in the pans. I wiped out as much as possible with paper towels but it was still a smeary mess.

I just happened to bake a potpie at 400 degrees so when I took out my dinner, I put the pans in the hot oven and turned it off, leaving the pans in there.

All the residual oil seemed to soak in this time.


I fried bacon and eggs in the skillet this morning with no sticking issues. I am going to saute veggies and fry some fish tonight and hope my luck holds out.

When I was a little girl my Daddy used to sit me down beside him and he would play "Boogie Woogie" Elvis songs for me on the chapel organ at the Funeral Home. Those were some of my happiest childhood memories.

I went to check the mail yesterday and the only thing in the box was this sweet card from my friend Martha. What a nice thought, it made my day. The verse is also one that was read at my wedding.

CARNIVAL -MARDI GRAS

Its that time of year. Usually I decorate and make a traditional dish, but this year I have been working 7 days a week and just haven't had the time or inclination to do it. There are many festivities going on, on the Island but the idea of dealing with traffic and crowds just does not appeal to me .

My ideal vision of celebrating Carnival would be to attend an oppulent Masquerade Ball in Venice. I admire the beauty and art of the fabulous costumes. I also think a gondola ride in the moonlight would be ultra romantic.
